On Tuesday 1st March 2011, The Manly Golf Club, one of the oldest in Australia, has been chosen for the AGM of La Chaîne des Rôtisseurs and their first dinner of the year.
Renowned Chef Markus Perkert prepared an exquisite dinner, with the following menu, with the wine selected by David Reberger.
Canapés
Yellow fin tuna tartare with ginger citrus dressing
Slow-roast lamb shoulder on sourdough and skordalia.
Chilled avocado shooter with fresh crab
Peking duck pancake with hoisin plum sauce
Rare Chipotle marinated beef with grape tomatoes
Tempura-fried Sydney rock oyster with pickled ginger sabayon

1st Course:
Twice-cooked goat’s cheese soufflé on rosemary, red onion jam and honey roasted walnuts.
Wine: Coriole Fiano 2010
2nd Course:
Rainbow trout fillet rolled in pancetta, baccala brandade, asparagus and burnt almond butter.
Wine: Houghton Wisdom Chardonnay 2008.
3rd Course:
Twice-cooked leg of Muscovy duck on a white bean purée, sautéed mushrooms and baby beets.
Wine: Brands Laira Eric’s blend 2001.
Dessert:
Orange and Grand Marnier chiboust in crisp filo pastry.
Wine: Batasiolo Moscato D Asti Bosc Del Rel 2009
